This yummy southern favorite is made with black beans instead of black-eyed peas. Serve with savory tortilla chips as a great party appetizer or serve on soft tacos with grilled or sauteed shrimp.

This fresh and zesty concoction also works well with grilled meats, fish, on top of a tasty burger or by itself with a cold beer.

It’s one of my favorite summer sides, but however, you decide to serve this summer delight, you can’t go wrong!

 

Yields16 Servings

Texas Salsa
 3 roma tomatoes diced
 11 oz can yellow corn, drained
 15 oz can black beans, rinsed and drained
 ½ onion diced
 1 red bell pepper chopped
 2 avocados diced
 2 jalapeno peppers, chopped
 ¼ cup cup chopped cilantro
 1 juice of one lime
 salt and pepper to taste

To make the salsa: Add the tomatoes, corn, black beans, red onion, bell peppers, jalapenos, avocado, and cilantro to a bowl. Salt and pepper to taste.

Toss with the desired amount of fresh cilantro and serve.

SUGGESTIONS:
This delicious salsa works well as tacos with grilled shrimp or chicken with soft tortillas or serve with taco chips as a dip.
