Texas Caviar with Black Beans

If you’re looking for a colorful, zesty, and crowd-pleasing dish, Texas Caviar (also known as Cowboy Caviar) is the perfect choice. Packed with protein-rich black beans, fresh veggies, and a tangy dressing, this recipe is a go-to for barbecues, potlucks, or even as a healthy snack with tortilla chips.

This yummy southern favorite is made with black beans instead of black-eyed peas. Serve with savory tortilla chips as a great party appetizer or serve on soft tacos with grilled or sauteed shrimp.  This fresh and zesty concoction also works well with grilled meats, fish, on top of a tasty burger, or by itself with a cold beer.

 


Ingredients:

  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, finely chopped
  • 2 roma tomatoes, diced (seeds removed for less liquid)
  • 1 avocado, diced (optional, for creaminess)
  • ¼ cup fresh cilantro, chopped

Dressing:

  • ⅓ cup olive oil
  • 3 tbsp red wine vinegar
  • 2 tbsp lime juice (fresh squeezed)
  • 1 tbsp honey (or agave)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper, to taste

Instructions:

  1. In a large bowl, combine beans, peas, corn, peppers, onion, tomatoes, avocado, and cilantro.
  2. In a small bowl or jar, whisk together olive oil, vinegar, lime juice, honey, cumin, chili powder, salt, and pepper.
  3. Pour dressing over the salad and toss gently to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving to let the flavors blend.
  5. Serve as a dip with tortilla chips, or as a side salad.
