Texas Caviar with Black Beans
If you’re looking for a colorful, zesty, and crowd-pleasing dish, Texas Caviar (also known as Cowboy Caviar) is the perfect choice. Packed with protein-rich black beans, fresh veggies, and a tangy dressing, this recipe is a go-to for barbecues, potlucks, or even as a healthy snack with tortilla chips.
This yummy southern favorite is made with black beans instead of black-eyed peas. Serve with savory tortilla chips as a great party appetizer or serve on soft tacos with grilled or sauteed shrimp. This fresh and zesty concoction also works well with grilled meats, fish, on top of a tasty burger, or by itself with a cold beer.
Ingredients:
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small red onion, finely chopped
- 2 roma tomatoes, diced (seeds removed for less liquid)
- 1 avocado, diced (optional, for creaminess)
- ¼ cup fresh cilantro, chopped
Dressing:
- ⅓ cup olive oil
- 3 tbsp red wine vinegar
- 2 tbsp lime juice (fresh squeezed)
- 1 tbsp honey (or agave)
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper, to taste
Instructions:
- In a large bowl, combine beans, peas, corn, peppers, onion, tomatoes, avocado, and cilantro.
- In a small bowl or jar, whisk together olive oil, vinegar, lime juice, honey, cumin, chili powder, salt, and pepper.
- Pour dressing over the salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving to let the flavors blend.
- Serve as a dip with tortilla chips, or as a side salad.
