Ingredients
  

  • 1 large bag (6 cups) mixed salad greens (spinach, romaine, or spring mix)
  • 1 cup canned mandarin orange segments (in juice, drained)
  • ½ small red onion thinly sliced
  • ½ cup crumbled feta or goat cheese optional for creaminess
  • ½ cup sliced almonds or pecans toasted
  • ½ cup dried cranberries optional for sweetness
Dressing:
  • ¼ cup olive oil
  • 2 tbsp apple cider vinegar or red wine vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Method
 

Instructions:
  1. In a large salad bowl, combine greens, mandarin orange segments, sliced onion, cheese, nuts, and cranberries.
  2. In a small jar or bowl, whisk together olive oil, vinegar, honey, Dijon, salt, and pepper until emulsified.
  3. Drizzle dressing over salad just before serving and toss gently.
  4. Serve immediately and enjoy the refreshing crunch!
